Winemaking

Whole clusters, uncrushed and unstemmed, go directly into a hermetically sealed tank. Intracellular fermentation, then after 30 days a gentle manual pressing, finishing fermentation with high turbidity. Native yeasts. No added sulfites and no corrections of any kind.

Manilva, Andalusia.

Soil

Albariza. Vineyard located 200 meters from the beach, at Mediterranean sea level.

Aging

Two months of refinement in tank at low temperature, then bottled without any treatment. Unfiltered. Unstabilized. Only inert gases are used.

Characteristics

It is a fresh and saline wine, light, with 11 degrees of alcohol and an intense, expressive nose.

100% Syrah. From organic farming.

Winemaking

Carbonic maceration of whole clusters, unstemmed and uncrushed, in a hermetically sealed tank for 10 days. Gently pressed with stems, cold settled and naturally fermented with native yeasts at a controlled temperature of 16 degrees. No added sulfites and no corrections.

Origin

Ronda, Andalusia.

Soil

Clay loam, very rich in nutrients and organic matter, with natural ground cover. At 650 meters of altitude in a valley beside a river.

Aging

One month of refinement in a cold tank, then bottled without any treatment. Unfiltered. Unstabilized. Only inert gases are used.

Characteristics

It is a light red wine with little astringency and a very expressive fruity nose typical of carbonic maceration.

L a U t o p í a

100% Sauvignon Blanc.

Winemaking

Destemmed and pressed directly with 50% of its stems, using very gentle pressure and constant protection against oxidation. Cold settled and fermented with native yeasts at a controlled temperature. Bottled by the ancestral method before fermentation finishes. No corrections.

Soil

Sandy soil, bare of vegetation in an arid area of the mountain range, around 800 meters above sea level on a steep slope.

Aging

Five months of aging on lees in bottle before disgorgement. Unfiltered. Unstabilized.

Characteristics

It is a very fresh and creamy sparkling wine, with well-integrated bubbles and a very expressive tropical nose.

100% Sauvignon Blanc.

Winemaking

The grapes are destemmed and macerated for 5 days with 40% of the skins. Manual pressing and fermentation with native yeasts at medium turbidity, with no sulfur addition and no correction of the must.
