“Simbad Romero wines was born from my desire to do what I love, what I trust and believe in, in my own way, without having to compromise anyone. As a professional, the time came for me to take this step. The responsibility of putting my name on the label of a bottle is great; there must be a lot of sincerity inside, and the wine must communicate, attract attention and represent me. I do not like getting lost in the makeup or homogenization of a product with additives, or taking part in that rather distorting business. I like honest wines, wild and a little crazy, with edges, authentic and humble. That is why I launched this project with a lot of love, excitement and seriousness.

I see it as a project open to everything, one that does not put obstacles in the way of the risk of working as I do, that also does not prioritize what people will say, and that without a doubt must make me happy and allow me to enjoy this profession. Knowing the growers and the plots I select is fundamental; then interpreting how to carry out the processes and design the products is what brings me closer to the artistic side of enology, without a doubt very interesting and fun. Perhaps not every wine consumer will understand them; there are already other big brands for that. My intention is different.”
